Our treatment of Simcoe results in beautifully balanced aromatics and provides a satisfying depth of hop-driven flavor. Summer Street IPA bursts with scents of spicy pine, lemon, and grape juice while focused flavors of citrus, pear, and essence of pine wash over the palate. Malt: American 2-Row Barley, C-120, Rice Hulls Chocolate, Roasted Barley, Smoked Malt, Flaked Oats, Turbinado Sugar ; Hops: Columbus. Our latest collaboration with Evil Twin Brewing is a heavenly, coffee infused stout drawing inspiration from Even More Jesus & our own PM Dawn. Ascendence is inevitable with unique complexities provided by the use of experimental sugars and a small percentage of smoked malts. Bold aromas of freshly ground coffee beans, cherry jam, and vanilla extend to the palate with additional notes of intense milk chocolate, vanilla, and slight smoke. Dusk Trill Dawn is dry with a light mouthfeel and moderate bitterness. 32 oz. limit per person

Malt: American 2-row Barley, Black (Patent), C-60, Caramunich, Roasted Barley, Special B, Dextrine, C-120, Pale Chocolate; Hops: Columbus. When we met the Omnipollo team in California at the inaugural RateBeer Best Fest, we knew we had to find a way to brew together. #sweden We decided to go beyond our comfort zone to craft an immensely complex Imperial Stout that landed at 12.7% abv. Then came a balanced addition of Madagascar Bourbon vanilla beans and subtle hint of green cardamom to accent a liberal dose of cold brewed medium roast Barrington Gold coffee

Part of our Small Bird series of seasonal, sessionable pale ales, Pocket Pigeon features malted spelt and a large dosing of Mosaic, Galaxy, and Columbus hops. Deep gold in color with a heavy haze and bright white head, Pocket Pigeon emits aromas of freshly squeezed orange juice, tart pineapple, and spicy hops. Cutting Tiles Double IPA, ABV 8%

Malt: Pilsner, White Wheat, Flaked Wheat, Dextrine, C-15; Hops: Mosaic. Cutting Tiles is an exploratory series of Double IPA's featuring a range of aromatic single hop varietals brewed with raw wildflower honey. This familiar first version, formally known as Artaic, is dosed with 100% Mosaic in all kettle, whirlpool and two massive dry hop additions. The local wildflower honey keeps the body light and drinkable but provides a floral, earthy backbone. Juicy, candied peach and nectarine up front backed up with a nuanced white wine on the nose that continues straight through in the flavor profile. Pillowy soft mouthfeel, with a restrained bitterness on the finish. New variants to follow!

Sleeper Street IPA, ABV 7.2%

Malt: American 2-row Barley, White Wheat, Dextrine, C-15; HOPS: El Dorado, Columbus. Following in the footsteps of our other "Street" IPA's, Sleeper shares the same base grains while placing the unique El Dorado hop at center stage. Opaque orange-yellow in color with floral aromas of lime zest, grapefruit peel, pine sap, and candied orange. Juicy, hop-driven flavors of bright citrus, melon, and herbal pine are balanced with medium bitterness, fluffy mouthfeel, and dry finish

I came here with a large group of friends. The place is very big for parties and families. The staff were very quick to order beers and food for us. The wild mushroom pizza was my favorite but it was a bit too salty. There are no flights but you can order 2 5oz of beers at a time.

Exceptional brewery! I've been to so many breweries throughout New England and this is easily one of the best. Everything here is top notch: the beers, the food, the beautiful (and HUGE) campus the brewery sits on... If you're a stout fan, this is the place to be! Nobody does a stout like Trillium; smooth as can be, high ABV and delicious flavor. They can easily get dangerous very quickly... The pizza here is absolutely fantastic, which is unexpected at a brewery. It's a neapolitan-style as they have huge wood-fired pizza ovens that are out on display in the bar area. I would definitely recommend checking this place out! :)

I always enjoy coming here. It can get very busy on weekends despite how large it is. They have great service and a clean environment. The food is pretty good and the beer is great.
